 Recently, one of my favorite spots to go to, @sohohouse added a Penne alla Vodka to their menu.  I’d forgotten how much I’ve it and find myself ordering it every time I eat there.  So much, I had to learn how to make a version of it at home. Check it out! 😋 

Penne all Vodka with Daring Chicken

2 tbsp olive oil
1 package Daring original plant chicken pieces
½ cup raw cashews, soaked
½ cup water + pinch of salt to blend cashews
1/2 large onion, or 3 medium shallots, thinly sliced
3 large cloves of garlic, minced
½ tsp chili flakes (adjust based on spice preference)
⅓ cup tomato paste
¼ cup vodka
½ lb pasta 
1 cup reserved pasta cooking water
1/4 cup nutritional yeast 
Lots of sea salt
Lots of fresh black pepper
Fresh basil to garnish

Heat oil in a large skillet.  Cook the Daring chicken pieces on one side until browned, then flip and cook the other side until browned.  Remove from the skillet and set aside.  Return skillet to stove for later.

In another pot, boil water with salt and cook pasta until al dente.  Drain and reserve 1 cup of the pasta cooking water.

To make your cashew sauce, in a blender, add the soaked cashews with ½ cup water and a big pinch of salt and blend until smooth. It should be creamy but not thick. Set aside.

Back to the skillset, add another tablespoon of oil, and heat.  Add in diced onion and minced garlic and sauté in over medium heat until translucent.

Add tomato paste and fry together for
5-8 minutes to release the flavor. Then add vodka and cook the alcohol down in the sauce, season generously with salt, pepper and chill flakes

Add in your cashew cream and about ½ cup of your reserved pasta water. Stir thoroughly until you have a smooth sauce.

Reduce heat to low and add your cooked pasta to the skillet, stirring and cooking until evenly coated in sauce. Taste and add more salt + pepper as desired.  Mix in your Daring chicken pieces and fresh basil.  Enjoy.
