RISE & SHINE: A Chia Parfait Almost Too Beautiful to Eat!

The perfect weekend breakfast is right here. This healthy yet indulgent dish provides so many health and beauty benefits. Let’s talk about the star of this recipe – Chia Seeds! Used by the Mayans back in the day, Chia seeds were praised for their ability to provide massive amounts of energy. Chia is actually an ancient Mayan word for “strength”. Needless to say, Chia seeds carry a huge nutritional punch in such a tiny package.
 
Chia Seed Health & Beauty Benefits:

Loaded with antioxidants (fight environmental pollutants)
11 grams of fiber per serving
High in protein
Fiber content helps lose/maintain weight

Chia & Fruit Parfait Recipe:
 
WHAT YOU’LL NEED:
Chai Seed Pudding
Plain yogurt
1 mango, diced
1-cup blueberries
Coconut palm sugar
Vanilla extract
Dish or cup for the parfait
 
WHAT TO DO:
Place 2 tablespoons of chia seeds into glass container.
 
Add approximately 1/3 cup of unsweetened almond milk to glass, 1 teaspoon of coconut palm sugar and splash of vanilla extract.
 
Stir and place into the refrigerator overnight (or 30 minutes if you are short on time)
 

HOW TO BUILD YOUR PARFAIT:
 
·      Starting with the yogurt, carefully spoon into the bottom of the dish
 
·      Next carefully add first layer of blueberries
 
·      Add diced mango
 
·      Carefully spoon on chia seed pudding
 
·      Continue to layer ingredients in this sequence until you reach the top
 
·      On the final layer add a sprinkle of coconut palm sugar and chopped almonds or nut of your choice
 
·      Final step – ENJOY
