Quick and Easy Vegan Meals that even Non-Vegans will LOVE!

Wanna go vegan for the day? Vegan diets seem to be the hottest thing on the block lately, largely because of all the amazing benefits that veganism offers. A vegan diet, even if temporary, can get your body in tip-top shape by promoting weight loss, cleansing, and deep nutrition through vitamins and minerals. If you want in on these things, keep reading for some yummy vegan meals that you can whip up in 10 minutes or less!

 
 

Meal #1: Lemon Cream Pasta


 
 
Ingredients:

  • 1 cup of raw cashews 
  • 2 whole lemons 
  • 1 cup of water 
  • 12 ounces of pasta
  • Salt, to taste
  • Parsley, to taste
  • Pepper, to taste

Begin this recipe by boiling a healthy serving of your favorite pasta. While thats cooking, begin to zest the lemon and squeeze as much lemon juice from it as possible. In a high-speed blender or food processor, begin to blend the cashews, lemon zest, lemon juice, water, and salt together. Once complete, pour the sauce over the cooked pasta, and granish with parsley and pepper to taste! 
 
 

Meal #2: Vegan Burrito Bowls 


 
 

Ingredients: 

  • 1 1/2 cups of quinoa 
  • 2 1/4 cups of water
  • 1 can of diced tomatoes
  • 1 can of black beans
  • 1 can of corn
  • 1 avocado
  • 1 tablespoon of fresh lime juice
  • Cilantro, chilli powder, garlic powder, salt, and cayenne pepper to taste.

Start off by adding the quinoa, water, and diced tomatoes to a skillet or saucepan. Use medium to low heat until the quinoa is done cooking and all liquid is absorbed. This should take between 12-18 minutes. Once this is done, stir in the black beans and corn, lime juices, and spices. Add avocado slices as the finishing touch on these better-than-Chipotle burrito bowls! 
 
 

Meal #3: Chips and Queso


 
 
Ingredients:

  • 1/2 cup of raw cashews 
  • 1 small red bell pepper, deseeded and chopped
  • 1 tbsp natural yeast
  • 1/4 tsp salt
  • 1/2 tsp turmeric
  • 1 cup of medium chunky salsa

This Queso is made simply by placing all ingredients into a high-speed blender or food processor. Once completed, you can serve this tasty vegan queso along with some tortilla chips, making the perfect side for your Quinoa burrito bowl!
 
 

Meal #4: Vegan Creamsicles!


 
 
Ingredients:

  • 1 cup full-fat coconut milk
  • 1 cup of orange juice
  • 3 tablespoons of agave
  • 1/2 tablespoon of vanilla extract

To whip up everyone's favorite summer popsicle, simply blend all four ingredients together in a blender until the liquid is smooth. Once finished, place the liquid into popsicle molds and freeze for about 4 hours until ready to serve!
