Lucky New Year Apple Pie Pancakes


Each New Year people chow down on certain foods to evoke good luck throughout the year. Apples are a symbol of developing love or love that has yet to blossom, optimism of the future, harmony and pleasure. Apples reveal a five-point star when cut across the middle, which represents a balanced life. They also symbolize knowledge, wisdom and prosperity for a powerful life. Try this super easy recipe for Apple Pie Pancakes and get your dose of luck for the New Year!
Apple Pie Pancakes:

1/3 cup flour
2 tbsp oats
1/2 cup finely-chopped apple
1 tsp cinnamon
2/3 tsp baking powder
1/8 tsp salt
1 tsp pure vanilla extract
1 tbsp sugar (omit if you don’t want sweet pancakes)
1/3 cup milk of choice (or more, for thinner pancakes)
Combine dry ingredients in a bowl, then add the wet ingredients. Mix, then cook in an oiled pan, on low-medium heat, flipping each pancake once. Top your lucky pancakes with syrup or ice cream of choice. You can also cut up more apples, sprinkle them with cinnamon and sugar  and boil them in a little water to make an apple compote.
