HOLIDAY RECIPE: Sweet Potato Pecan Casserole


We've all waited over 365 days for Thanksgiving or Christmas Day to arrive and our tummy's are screaming for signature dishes that classify these food baby inducing holidays. Sweet potato casserole is a must-have during this festive occasion. The scrumptious dish is an all-time holiday favorite on dinner tables. If you're helping with the cooking this year, wow your family with this perfect mix of a yam casserole and a sweet potato pie. They will be begging for seconds!

4 large or 6 medium sweet potatoes (Or 1.5 cans of yams - drained)
2 Tbs. margarine
1/4 cup half & half (or soy creamer or soy milk)
1/4 cup orange juice
1 tsp. vanilla extract
1/4 cup brown sugar
1/4 cup maple syrup
1/2 tsp. salt
3/4 tsp. grated nutmeg
3/4 tsp. cinnamon
1/4 cup raisins (optional)

Topping: 1/4 cup margarine
1/2 cup brown sugar packed
1/3 cup unbleached white flour
3/4 cups chopped pecans
2 Tbs. maple syrup
Mini Marshmallows (optional)

1. Cook and peel the sweet potatoes (Or use canned yams to save time)

2. Preheat oven to 350 F and set aside a greased 2 quart casserole dish.

3. Mash potatoes with margarine until smooth; add half & half (or soy creamer or soy milk), orange juice, vanilla extract, brown sugar, maple syrup, salt, nutmeg and cinnamon; pour into prepared casserole dish.

4. Mix the topping ingredients together until well combined; sprinkle over the casserole and bake for 45 minutes.
